Making Dahi Bhalla batter:
To make the batter for Dahi Bhalla, wash ½ cup urad dal and 4 tablespoons moong dal twice in water. Then soak both the dals overnight or at least for 4 to 5 hours. Later drain all the water. Add ½ teaspoon cumin and a pinch of asafoetida along with the dal in a grinder jar. If you want, you can also add 1 teaspoon of roughly chopped ginger to it. Add water little by little and grind all the ingredients to make a soft batter. The batter should not feel grainy when touched. Add 6 to 7 tablespoons of water.
Take out the ground batter in a bowl. Add a little salt to it. Stir the batter vigorously for a few minutes. Stirring vigorously makes the batter more light and fluffy. The test of the correct consistency of this batter is the floating test. Take some water in a small bowl. Add 1 teaspoon of batter to the water. The batter should float. If it does not float, it means its consistency is thin. Add a little semolina or rice flour to it to thicken the batter.

Now put oil in a pan and make Bhalla and add it to it. Let everything cook well and then add water to a pan and put it in it.
Now prepare the curd:
If you want to prepare curd for Dahi Bhalla, then first whisk the curd and add salt, sugar, cumin powder, red chili and black pepper powder to it. Mix everything well. After this, all you have to do is take out the Bhalla from the water and put it in the curd. Now take out the Bhalla with curd and put it in a plate and put Namkeen, Papdi and pomegranate seeds on it. Add a little black salt on top. Add Dhania leaves and serve.
