Method of making Gajar Ka Halwa:
First step: To make Gajar Ka Halwa, first wash it and peel it well. Now, if you want to make Gajar Ka Halwa quickly, then instead of grating it, cut it into pieces and boil it by adding water in a pressure cooker. After 4 to 5 whistles, turn off the gas. Remove the whistle and take out the carrots from the cooker. Mash the soft carrots well with the help of a ladle.
Second step: Now turn on the gas and keep the pan and put the carrots in it and fry till the water dries up. When the water dries up, put the carrots on one side and add half a cup of ghee in the pan. Now cook the carrots boiled in ghee well. Remember to cook the carrots till they turn golden in color. When the carrots start sticking to the pan, then slow down the flame and add half a quarter of milk and cover the carrots again and cook.
Third step: When the carrots are well mixed in the milk and the halwa starts thickening, then add 200 grams of mawa and crushed cardamom to it. Keep the flame of the gas slow. And cook the carrot halwa on low flame for 2 minutes. Your carrot halwa is ready for serving. Garnish it with dry fruits on top.
